Ingredients

  • 8 oz smoked bluefish, skin and dark bloodline removed, flaked
  • 6 oz cream cheese, softened
  • 2 tbsp sour cream or crème fraîche
  • 1–2 tsp prepared horseradish
  • 1 tbsp lemon juice, plus zest of ½ lemon
  • 1 small shallot, very finely minced
  • 1 tbsp fresh dill, chopped, plus more to garnish
  • A few dashes of hot sauce
  • Black pepper
  • Crackers, toasted baguette and cucumber slices, to serve

Method

1. Blend the base

Beat the cream cheese, sour cream, horseradish, lemon juice and zest until smooth, by hand or in a food processor.

2. Fold in the fish

Add the flaked bluefish, shallot, dill, hot sauce and pepper. Pulse or fold until combined but still a little textured. Taste — smoked fish is salty, so you likely won't need salt.

3. Chill

Refrigerate at least 1 hour so it firms up and the smoke comes through.

4. Serve

Top with dill and black pepper and serve with crackers, baguette and cucumber. Keeps 3–4 days covered in the fridge.

Tip: No smoker? Most East End fish markets sell smoked bluefish.
